STRAWBERRY JAM CINNAMON CAKE


adapted from PAULA DEEN'S JAM CAKE

prep :30 minutes

Cook:40-45 minutes

Makes two standard sized square cakes

Ingredients:

1 cup sugar

1 tablespoon strawberry jam

1 cup buttermilk

1 teaspoon baking soda

1 teaspoon cinnamon

1 teaspoon ground nutmeg

3 cups all purpose flour

3 eggs

2 tablespoons shortening

1 teaspoon baking powder

1 tablespoon applesauce (Mott's no sugar added)


Preheat oven to 350 degrees

I used softened butter to prepare my pans


In a large mixing bowl whisk together eggs, shortening and buttermilk

Slowly add sugar whisking until all is combined

Whisk in applesauce and jam

In a separate bowl whisk together flour, baking powder, nutmeg, cinnamon and baking soda

Slowly add dry mixture to egg mixture

Whisk or stir until smooth

Spoon batter evenly into the prepared pans

Once cooled you can spread jam over the cakes
