Blackberry and Applesauce Cake

**adapted from Best Applesauce Cake recipe 2021: JOJO RECIPES **

Makes 8-15


1/2 cup butter

1 cup white sugar

1 cup of applesauce ( I used MOTTS NO SUGAR ADDED applesauce)

2 cups all- purpose flour

1 teaspoon baking soda

1 teaspoon cinnamon

1 teaspoon nutmeg

1/2 cup of frozen blackberries

(thawed and mashed)

Cooking Directions

Preheat oven to 350 degrees Fahrenheit lightly butter and flour a 1/4 sheet cake pan

In a large bowl, whisk together creamed butter, sugar, and applesauce

In the same large bowl, stir in flour, soda, and spices

Pour half the batter into the sheet pan. spread evenly with a spatula

Add the mashed blackberries to the batter in the bowl. Stir. if bits of blackberries remain, no problem

Pour blackberried batter onto the sheet pan (Spread Evenly)

Bake at 350 degrees Fahrenheit for 40 minutes (I used a timer and a toothpick poked into the center to ensure doneness)

When cooled, adding blackberries and confection sugar are optional
