INGREDIENTS:

Two Cornish Hens

Sage leaves

2TSP molasses

Turmeric
-
Sea salt
-
Cayenne Pepper

Olive Oil

Pepper

Butter

Two avocados

CAST IRON SKILLET
INSTRUCTIONS:

Pre heat oven to 425 D

Prepare your cast iron skillet

( mine came seasoned)

( I had no specific reason for using a cast iron skillet. Some one bought it for me. And I hadn’t used it yet)

Rinse off the hens

Pat them dry
-
Melt the butter ( microwave is ok)

Smear one tablespoon olive oil, two tablespoon of molasses and the melted butter onto the birds, coating evenly, the underside and inside as well.

Then shake sage leaves, salts, peppers and turmeric all over the birds. Once again until evenly coated.

Place in skillet, underside down.

Halve two avocados, remove seed. Then place halves, cut side down, alongside hens.

Place skillet in oven.

Cook until tops are golden brown.

This should take about an hour. Halfway through, I turned the hens over, pouring some of the gravy on top.

I didn’t touch the avocados.
